Ingredients
6 Peaches (halved and quartered)
1 Lemon (juiced)
1/2 cup (1 stick) of softened salted Butter
1/8 teaspoon of Cinnamon
1 1/3 cups of Self-rising Flour
1/4 cup of Rolled Oats
1/4 cup of Granola
2/3 cup Whole Milk
For the Top:
1/4 cup of Granulated Sugar
Cold Water to spritz top before baking
Preparation
Step 1
Cut peaches in half and quarter each half. Add to a large bowl. Add lemon juice and cinnamon. Stir to combine and set aside.
Step 2
To a separate bowl, add flour, granola and oats. Stir to coat. Add sugar and softened butter. Stir until the mixture resembles coarse breadcrumbs. Add milk and mix until the mixture is a spreadable batter.
Step 3
Add the peaches to an oiled 9 or 10 inch pie plate. Press peaches firmly into the pie plate to make the top even. Pour batter topping over peaches and spread evenly. Wipe any drips on the edges of the pie plate to avoid burning.
Step 4
Sprinkle the top evenly with remaining sugar. Spritz the top of the sugar generously with cold water with a spray bottle.
Step 5
Bake at 350 degrees on the middle rack for 40-45 minutes until the top is golden brown and crisp.
Serve with vanilla ice cream and enjoy!
