Ingredients

  • 3 Yellow Summer Squash (sliced in 1/4-inch rounds)

  • 1 pint of Cherry Tomatoes (halved)

  • 1/2 Red Onion (sliced thinly)

  • 1 tablespoon of EVOO

  • 1 tablespoon of Tajin Seasoning

  • Salt & Pepper to taste

  • Fresh Basil (chiffonade)

Preparation

Step 1


Wash yellow squash and cherry tomatoes. Cut the yellow squash into rounds, cut the cherry tomatoes in half, and cut the red onion into thin slices. Set aside separately.


Step 2


Add Tajin, salt, and pepper to summer squash. Mix until evenly coated.


Step 3


Heat a nonstick skillet on medium-high heat. Add olive oil. When olive oil shimmers with wisps of smoke, add the red onion and sauté until translucent (3-4 minutes).


Step 4


Add seasoned squash and sauté 4-5 minutes until tender. Reduce heat to medium. Cover skillet with lid and steam for 3-4 minutes until squash is fork tender.


Step 5


Remove cover. Add halved cherry tomatoes and stir until the tomatoes are slightly blistered. Add salt and pepper to taste.


Step 6


Garnish with fresh basil. Serve immediately with your choice of protein and enjoy!
